Discover Welsh Cakes this year for a Christmas treat!

If the ever present mince pie is not one of your favourite things over Christmas time, then his year, why not try your hand at Welsh Cakes instead?
This traditional Welsh delicacy is a unique product, somewhere between a scone and a pancake, cooked on a griddle – or of course, a traditional bakestone if you happen to have one handy! Just mix flour, butter, sugar eggs and milk together along with your favourite spices and dried fruit. Simple but so very tasty! Just like mince pies, they taste wonderful served hot with cream, or coated liberally with sugar, for a lighter. They are just as nice cold and great to nibble on while enjoying a relaxing cup of tea.
The basic mixture is so versatile though that any spice or fruit combination should work well. Cinnamon and cranberry is another traditionally festive combination to try but In fact you don’t have to add anything at all. Just make up the plain welsh cake mixture, cook them on the griddle, then spread the jam of your choice on warm fresh cakes for a satisfying sweet treat.
